Opening bash as hotel revels in big rebirth

Diners were all smiles as a popular restaurant reopened following a £200,000 investment in a resort hotel.

Little Ethel’s, part of The New Valron Hotel in Trafalgar Road, Blackpool, officially opened for business this week following a £20,000 refurbishment.

It follows an 18-month project by owners David McNeil and Robby Dick to modernise the venue – with no expense spared to bring the building up to scratch.

Ryan Wallace, the New Valron Hotel’s restaurant manager, said it promised to be Blackpool’s “newest and most vibrant” venue.

The 28-year-old added: “David and Robby took over the hotel 18 months ago and modernised it all.

“Blackpool trade is mostly coach parties and it is the source of the hotel.

“It was a little tired inside and they have really given it a fresh look.

“The owners had the idea three months ago for opening the restaurant. It looks great and has really been a big hit with customers.”

The restaurant is named after the owners’ pug Ethel.

As well as a new restaurant area, a new sound system has been put in place to keep guests entertained – as well as fresh new menu with some interesting additions.

Mr Wallace added: “The food promises to be an eclectic mix of modern and traditional dining.

“Fully complimented by the striking decor, Little Ethel’s really is the place to be seen.

“We have food such as Scottish Black faced amb, renowned for its exceptional flavour, as well as grilled Buffalo burgers – not forgetting traditional British grub.”
