He turned vegetarian and then vegan several years ago due to his opposition to animal cruelty, but he said that he was always tempted by the smell of KFC on his travels and realised that many vegetarians would still want a fast food treat now and then.

He said: “I wanted to create something similar, something special, not just the green healthy food that is normally associated with vegans, but something like fast food as a treat.

“Seitan is wheat protein, gluten, it is a meat substitute that is becoming increasingly popular. Out of all the substitutes I think it has the most meat-like texture and you can do more with it. The only thing, it is obviously not gluten free.

"I chose the name Seitan Hustle to get away from the image of vegans always going on about being vegan, but instead to appeal to everyone not just activists."

Tony's full time job came to an end during the lockdown, but he said he had already decided to launch his food business.

He said: “I made hundreds of different recipes while on furlough, different ways of blending and mixes to get the right texture and flavour. I started selling the food in August from the kitchen at home. I built up a following on social media and from the first week it has been fully booked with locals and people travelling to try it.

“Now we have premises that we are using for takeaway deliveries. The plan is close over Christmas and use that time to work on the site and then have it ready after New Year for people to walk in.

“Fried ‘chicken’ burgers, chicken-style wings and doner kebab are really popular and rice boxes and salads. It has gone really well so far.

"We have had lots of meat eaters coming back weekly. It is could and may encourage meat eaters to try vegan foods now and again to help the planet.”
